In creating this wine list, we were guided by the philosophy that defines the Chef’s cuisine: respect for the highest quality ingredients, perfectionism and precision of execution, together with a pursuit of purity, finesse, and depth of flavour. Regardless of origin or style, the wines share what matters most to us: quality in the glass, the personality and mindset of the producer, a profound respect for the land, and a boutique, thoughtful approach. We are especially drawn to small, passionate importers and producers who work with deep respect for nature, often embracing minimal intervention, authenticity, and a conscious, patient approach to winemaking.
Our selection brings together great classical terroirs, the most exciting rising stars of contemporary winemaking, and hidden gems from lesser-known regions, places beyond the spotlight, where character and beauty can truly shine. This wine list is a living, breathing thing. It evolves with the seasons, the inspiration of the Chef’s menu, and our own curiosity to explore the world of wine.

MONIKA KALISTA
Her approach to creating a wine list is rooted in the same values she finds in the finest cuisine: respect for quality, precision, authenticity, and attention to detail. Above all, she looks for wines with personality — wines shaped by a clear vision from the producer, a deep respect for place, and a thoughtful approach to working with nature. She feels a particular affinity for small, boutique wineries and producers who embrace minimal intervention, patience, and authenticity, while equally valuing great, classic terroirs and young winemakers who are charting new directions in contemporary wine.
That is why her selection is not confined to a single style or region. It brings together tradition and the discovery of lesser-known places, established names and hidden gems, as well as wines that have already become part of the canon with those still waiting to be discovered.
After several years in Sweden, Monika returned to Kraków, eager to put her experience to use and contribute to the development of Poland’s gastronomic scene. In her work, she combines knowledge, curiosity, and a deep passion for wine with the belief that the best pairing is one that not only complements a dish, but also tells a story of its own — one that stays with the guest long after the dinner has ended.
